Breakfast Tostadas


This is a quick and easy family breakfast.  Family members can have fun adding their favorite topping to the Tostada.  

Breakfast Tostadas  
4 servings, 2 Tortillas each



1 pkg. O’Brian Style hash brown potatoes
2 T. oil
8 eggs
½ C. milk
2 green onions, chopped
1 C. cheese, grated
8 small corn tortillas
1 C. salsa
½ C. sour cream

 
1. In a large skillet, heat oil.  Add hash-brown and cook until browned.
2. In a large bowl combine eggs, milk and green onion.
3. Heat a medium non-stick skillet.  Add egg mixtures.  Stir and cook until eggs are set.
4. Wrap tortillas in a paper towel and heat in microwave until warm.
5. To assemble; top each tortilla with hash-browns, egg mixture, cheese, salsa and sour cream.
6. Store leftovers covered in the refrigerator.  Reheat to serve.


You can also add ½ lb. diced cooked bacon or ½ lb. of browned sausage.
